Has the typical color, a ruby red really transparent and clear so that in very bright environments can be exchanged for rosé , a sparkling rosé because the bubbles are there, and the foam is also clear, pinky and evanescent .
Remained uncovered, the Vineyard of Christ (this is the english translation for Vigna del Cristo) leaves smell flowing to our nose , and feel a scent of red flowers , wild strawberries and currants.

Here, however, there is nothing sweet , Lambrusco di Sorbara DOC Vigna Del Cristo 2012 Cavicchioli & Sons is clearly dry , so dry that immediately feels especially the sparkling , then there’s a little bit of sour and only in the final feel of unripe fruits .
With these assumptions, the pairing are not difficult , we can try it with pasta , like tortellini pasta with tomato sauce , tagliatelle with meat sauce or stuffed like cannelloni and lasagna.
I’ve also tried the lamb and it’s perfect , indeed this Lambrusco di Sorbara Dry tends to go well with fatty meats in general because it cleans the palate , served at 12-14 degrees and attention because it goes down well trough your throat but it’s a 12 degrees wine .
